Long overdue for an update

Hey guys. Sorry this is so late! And, sorry there's no video. It has been a whirlwind of shit the last few days. I'm not only dealing with the gut rot known as gastritis. I'm now taking care of my sick mom and watching my grandma and dad while she rests. The bad news? I have been eating like complete shit the last few days. I had to have a milkshake one day because its the only thing that helps with the gastritis. If you have never had the pleasure of experiencing it let me try to explain it. You get a burning feeling in your upper abdomen that is similar to doing a million sit ups. And, once it get to the peak of burning and gnawing, you get really nauseous and begin to drool. It's the absolute pits. I have been trying really hard not to stress it, but today i gave in and ate McDonald's. But you know what, there's beauty in it. Tomorrow is a brand new day. Tomorrow, i wont eat like a complete pig. And, i wont gain all my weight back due to one horrible meal. There is no reason to beat myself up for slipping up once. I'm learning to trust myself to look back at my mistakes and tread on without dwelling on them. So yeah, I said fuck it and got fries. Tomorrow i will eat better and work out and all is forgiven.
Anyway. On to the weigh in. On Sunday i weighed 292.2. Which is a total loss of 12.9 lbs. Not too shabby. I cna already tell I'm already going to need to bump up my exercise. Phil sent me an invite to fitocracy. Here's my profile.



I just started this today...which is whhhhhy i have not done anythang.

So. Basically you work out for points. The more points you have, the higher level you get. You can do things like quests such as "do 3 sets of bench-presses this week" and bam 10 extra points. If you want an invite leave me a comment with your email and I'll hook yo ass up!

Oooo i almost forgot. I made THE best pastaless spaghetti. It was seriously better than what i would make with the pasta and here's the recipe for you!

-1 spaghetti squash, cooked and (i really don't know how to describe the process of removing the pasta like strands so i'll call it:) forked out.
-1 package chicken Italian sausage
-1 jar of your favorite tomato sauce or homemade (i used a roasted garlic tomato sauce mmm)
-1 cup mushrooms
-1 can olives
-1 large zucchini diced
-1/2 onion chopped
-3 cloves garlic, pressed or minced
-2 tbsp olive oil

First things first. You gotta cook your spaghetti squash. I cut mine in half, a daunting task considering it had the dexterity of a pumpkin (and kinda smelled like one too). Then i placed it in a glass baking dish and filled the bottom with water. I seasoned it with garlic salt and pepper and popped that baby into a 350 degree oven and let it do it's magic. I didn't time it i just kept checking on it to make sure it wasn't burning. I would say it took probably and hour to get the cooking done.
While my big ass squash was in the oven i started my sauce. I took the two tbsp of olive oil and sauteed my half an onion and garlic for a few minutes before i put my chicken in. I took the skin off and cooked it crumble style, but i bet it would be delicious any way you do it (meatball style, slices, whole whatever your mind takes you) Once the chicken is fully cooked add all ur veggies and tomato sauce and simmer until the squash is done! At around 6 points for a cup and a half it's super filling and really good for you.

10 Little Known Facts


So, it’s Saturday night and I’m spending it like any normal 24 year old: putting together new house goods from IKEA, doing dishes and doing about 20 loads of laundry! Yeah, I’m totally living the wild life.  Although, I am currently enjoying an ice cold 55 calorie beer with my smart ones cookie dough sundae.  Yeah, Badass status for sure.
Anyway since it’s the weekend and I didn’t have to endure the diet obstacle course of work, there’s not really much to talk about today.  And, since I know the 4 or 5 friends that I have reading this blog aren’t checking 50 times a day; I know my over 300 page views in one day are people that really know nothing more than I’m some crazy fat chick that posts half naked pictures of herself on the internet. Not so dear readers! While I am some crazy fat chick that posts half naked pictures of herself on the internet there are many more layers to Nik. And here are 10 facts about me:
1. My full first name is Nicole. Not Nichole. It is pronounced “Nik-ole” not “Nik-hole”. I usually go by Niki. Nik is reserved for really close friends, and my mom. Also there is only one way to spell Niki and Nik. It frustrates me to no end when I get “Nikki.” Again, it’s pronounced “Nik-ee” not “Nik-Key” or “ni-ki-key.” And Nik is the shorter version of Niki. Fact Number 1? I’m super anal about how people spell my name.
2. All of the nicknames my family and fiancé have for me are food related: Coco, Cheeto, chicken, bologna and my absolute favorite because my grandma used to call me it, Niki-noodle.
3. While I am not a tidy person by any means, I am a clean freak. I have been known to spend 3 hours scrubbing an oven after an 8 hour work day. My favorite cleaning supply is toothpicks because they get the grime out of small spaces. In fact, just before starting tonight’s blog I scrubbed the shit out our teapot because the rim on the bottom was dirty. When I was a supervisor at Togo’s (a sandwich shop) and Baskin Robbins, my favorite saying was “If you have time to lean, you have time to clean.” I’m pretty sure the crew hated me.
4. I went to school to become a funeral director. I see dead people on a daily basis and I have embalmed before. Although, I haven’t embalmed in close to two years, I can pretty much bet I can still raise a carotid artery in less than a minute still. I have my Associates of Science in Funeral Service Education.
5. I was in one beauty pageant when I was about a year old and got first place in my age division. I still have the trophy at my mom’s house.
6. Every year I do the “walk to end Alzheimer’s.” My dad was diagnosed when was 56. So it’s a cause really close to my heart.
7. Halloween is my absolute favorite holiday. I love dressing up, and I’m usually a zombie. I’m pretty much obsessed with zombies.





8. I got my pup Dexter because someone decided that he was annoying and threw him out of a car at a McDonalds. My friend picked him up and called me to see if I wanted him. I took him home that day and told Phil it was only so he could spend the night to see if he got along with Chip, our cat.  And, he’s been with us ever since.
Yeah they got along just fine.

9. My favorite color is leopard print.
10. I have 10 tattoos, 11 if you count my cover up.

Shimmying and other forms of debauchery


Ah, the look on a coworker’s face when you politely decline the yogurt/sugary cereal mixture.  It almost broke my heart.  Not to mention, the wonderful florists that we work with brought in a big pink box of doughnuts. I told you my office was a living hell. Today was, shall we say…trying. Being in Admin during the first of the year is stressful, especially when you’re just starting out. Not to mention, we’re dealing with my great grandma being diagnosed with liver cancer.  Needless to say the first thing I wanted today was a brick of chocolate. But I know that if I did eat badly the only thing that would change would be my weight.  All the problems and stress would be there once the food was gone. Being the stress eater that I am, that was a big step in the right direction.  So I took a big breath and a long sip of water and moved on with my day. I went and saw my granny and she told me the best way to lose weight is being in a hospital, she lost 8 pounds since the first of the year. Even with the cancer, she’s still got her spunk. She almost made me cry when she said she has to live long enough to see me get married. I told her that she would, and if things were looking bad, Phil and I would go to the courthouse and she could come.
Ok enough of the sad stuff. One of the highlights of my day was having my roommate call me and try to figure out a dinner to make for. For those of you that don’t know, Phil and I live with one of my best friends, Sunami. Yes. That is her real name. Yes. She has heard every last cheesy line about “riding the tsunami.”  She’s a Puerto Rican firecracker that has never had to diet a day in her life that makes the best can-can pork chops (a deep fried pork chop with the slab of bacon and skin still attached, so basically a heart attack on a plate).  My favorite part of the conversation:

Sunami: So what can’t you eat on your diet?
Me: I can eat pretty much everything.
Sunami: So anything?
Me: Yeah, except gravy.
Sunami: (in the most heartbroken tone imaginable) No gravy?!?!

And let me tell you, that girl made the best chicken stir fry with brown rice I’ve had in my entire life.  And it was only around 9 points. AMAZING!
So, I’ve been talking a lot about the way I eat and not a lot of the exercise that I’ve been doing. Today, I tried my new belly dancing DVD.  Holy shizzballs, I was dying after the warm up. Every time I wanted to give up I just kept repeating in my head “baby steps Nik, baby steps” So after the warm up of shimmying and other coordinated moves that made me look like I was having a seizure, I decided maybe it was time to play with our medicine ball. Then I finished up with 15 minutes of everybody dance and some stretching. While I might not be killing myself with my workouts, it’s more than I did yesterday. And in the end, that’s all that matters. Everything is baby steps. And eventually I’ll be running marathons.
I really hope you guys are excited about the video weigh in on Sunday. I have a lot of really great ideas.  
Oh and before I end this, I found this recipe I made the last time I was on weight watchers. It’s quite possibly the easiest soup in the world to make and it’s full of flavor.  Plus, it’s only 4 points per serving. This recipe makes about 10 servings.

Date Night


So today, I got to battle a tough predicament for any dieter... DATE NIGHT muahahah. Or more aptly titled “eating out at a restaurant and feeling full without pigging out.” Our friends Stef and Chris got us a gift card to Applebee’s for Christmas, and let me tell you, that place is something. Everything is smothered in cheese, fried or prepared in some other way that make the calories triple for no good reason.  Even the salads are drenched in calorie laden creamy dressings. The vinaigrette (which is usually the only weight friendly dressing choice in restaurants) had freakin’ bacon in it. And, don’t get me wrong, I would be all over that shit if I wasn’t trying to lose a model and a half’s worth of fat. After carefully looking over the menu I decided on the garlic sirloin, with mushrooms, spinach and I substituted the herb potatoes for broccoli. You guys do know that most restaurants will substitute starchy veggies with little to no nutritional value for yummy colorful veggies with practically no calories and full of good for you stuff, right? Yeah me neither because I never tried before tonight! So let’s add this up: 7 oz. garlic marinated sirloin steak, sautéed mushrooms with spinach and steamed broccoli (and tons of A1 steak sauce). Any one care to take a guess on what kind of punch to the stomach my diet got from this meal? Anyone? No….Okay fine I’ll tell you. 450. FOUR HUNDRED AND FIFTY measly, tiny, minuscule little calories! That’s it! That’s only 50 more calories than a liter bottle of Mountain Dew. And, despite me ordering medium rare and receiving a medium to medium-well done steak, it was pretty damn good! Another thing I wanted to talk about was water consumption. Probably one of the most important things about dieting. It keeps you full and gives you little bursts of exercise while running to the bathroom every 20 minutes. I personally drink 3-5 of these day boys a day:


That, my friend, is a 750 ml camelback adult sippy cup. And, it is the shit. It’s a little over 32 oz. and spill proof due to the fact you have to bite the straw to get anything out of it. But plain water can be boring. That’s why I use this:


Mio. Mio is basically if god pissed in a bottle. Its water enhancer with 0 sugar and 0 calories. My favorite is the berry pomegranate flavor. Oh yeah, and they also make this:

Mio with mother fucking caffeine. Gone are the days of fatty, sugary energy drinks and expensive caloric Starbucks coffees for this girl. It’s pretty much a miracle.

A few more things. I don’t think I’m going to be posting pictures every day. For one, I was late to work this morning so I didn’t get a chance to take one. Secondly, I think the progress will be better seen doing it with my weekly weigh ins. Give me some feedback! Nao! Another thing, are my daily food logs interesting? OK folks, here's what I ate, what I did to exercise and a pic of me. The only reason I’m posting pictures of me in my underwear is because everyone always says I don't look as heavy as I am. Hopefully this will make those people realize that yes I am over 300 pounds and it’s not okay. You don't have to say that I’m not the "fat friend" or "you're not that fat!" because, yes I am. These pictures are really embarrassing and it's taking a lot of courage to post these. But, I swear that I will never look like this ever again.


Breakfast-
1/2 cup eggbeaters - 1 point
3 strips turkey bacon - 2 points
1 1/2 oz of colby jack cheese - 4 points
2 small mushrooms - 0 points
2 oz guacamole - 2 points
Breakfast total: 9 points

Lunch:
1 can Progresso Chicken and wild rice soup - 5 points
2 ribs of celery - 0 points
Lunch total: 5 points

Dinner:
5 oz grilled boneless, skinless chicken breast: 5 points
1 cup broccoli: 0 points
Dinner Total: 5 points

Snacks:
1 cup grapes: 0 points
1/4 cup honey roasted almonds: 5 points
2 mini slim jims: 2 points

Exercice:
20 minutes of Everybody dance: 7 Activity points

Weight Watchers / Breakfast Recipe

Just signed up for WW. I have always had success losing weight using it. But, i usually end up stopping after a few weeks and up to 20 pounds gone. This time I'm following through! Anyway here's a recipe that i learned when I was going to get gastric bypass (yes.... it's been that bad, but i decided that i needed to do this on my own.) It's so yummy and so easy to do. I usually make a huge batch and pop them in the toaster oven when I'm ready to eat them.

Egg and Bacon breakfast cups
Ingredients:
  • 1 carton of egg beaters (i use the southwestern flavor)
  • 5 strips of turkey bacon chopped
  • 3 3/4oz slices of Colby jack cheese (i have also used string cheese but i LOVE Colby jack) chopped
  • Pam spray
Directions
  1. Spray down a muffin tin with Pam, i usually just do a super short quirt in each section.
  2. pour the egg beaters into each section about 3/4 of the way up
  3. add the chopped turkey bacon and cheese.
  4. Bake at 350 for 10-15 minutes. Keep an eye on it so it doesn't burn.
And that's it! Super simple, super easy and super yummy. With WW it's 1 point a cup. You can add mushrooms, peppers, onion or any other veggie really without messing up the point total. For those not on weight watchers here are the nutritional facts:

A new year, a new me.

Since this is my first blog post I guess I better introduce myself. Hi. I'm Niki. I'm a newly engaged administrative assistant at a funeral home. Yeah, like where dead people are. I went to school to become a funeral director but found that my love for calculations and numbers took over. The whole reason for this blog is so i have to hold myself accountable to losing the 120 lbs I promised myself i wouldn't have on my wedding date. So, 120 pounds in 22 months. I've been fat since I can remember. But, no more. No more bullshit excuses. No more feeling bad for myself. No more nights idly laying on the couch stuffing my face full of sugar and fat packed junk. No more. I hope that this blog will not only help me, but maybe some other fat chick out there will see my story and decide it's time for her to say "no more" with me.
